The fermentation takes place with the fruit stone, as this brings in a fine pinch of cinnamon if the fermentation process is perfect. Here it is important to ensure that the stones are not damaged as they emit a dusty or cardboard-like taste that can pass into the schnapps.
After fermentation, the distillation results in a very fresh and fruity brandy that turns out to be very jammy and sweet on the palate. The cinnamon and almond notes perfectly round off the noble liquor from our house. An excellent plum brandy that is only released for filling after several years of storage.
